The Bikini Cocktail

Serves 10 people

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Place the listed ingredients into a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Then, take off the burner allowing it to reach room temperature entirely. Decant into an sealable bottle, cap it and refrigerate it in the fridge, where it will keep for about one month.

For the Cocktail Base: Pour every spirits and syrup in a large bottle, allow it to infuse for one hour, then pass it through best through a fine cloth, making it perfectly clear.

When ready to serve: Pour 85ml from the batch mix into your cocktail shaker filled with ice, gently stirring lightly for a minute to cool it down. Strain to a cold coupe glass or similar, decorate with a few cranberries and finish using a quick spritz with the mandarin essence over the drink.
